Mini Banana Muffins For Kids Lunchbox with Simple Mills Mix

What I Made with Simple Mills Banana Muffin & Bread

Instead of making a loaf as directed on the box, I decided to have some fun with the mix and made 12 mini muffins and 6 donut cakes.

These mini treats are perfect for little hands and make a great addition to any kid’s lunchbox.

Ingredients:

1 box of Simple Mills Banana Bread Mix

2 eggs

1/3 cup Buttermilk

2 tbsp oil (I used avocado oil, but coconut oil works well too!)

Homemade Chocolate Spread ( Optional: To decorate the Donuts )

Instructions:

  1. Preheat Your Oven: Set your oven to 350°F (175°C).
  2. Prepare Your Baking Pans: Lightly grease a mini muffin tin and a donut pan, or use silicone molds for easy removal.
  3. Mix the Batter: In a bowl, combine the Simple Mills Banana Bread Mix, eggs, Buttermilk , and oil. Stir until smooth.
  4. Fill the Pans: Use a spoon or small scoop to evenly distribute the batter into the mini muffin tin and donut pan.
  5. Bake: Place both pans in the oven. Bake the mini muffins for 15-18 minutes and the donut cakes for 20-22 minutes, or until a toothpick comes out clean.
  6. Cool and Enjoy: Let them cool in the pans for 5 minutes before transferring to a cooling rack.

Serving Suggestions:

These muffins and donut cakes are soft, flavorful, and naturally sweetened from the bananas. Pack them in your child’s lunchbox as a snack, or pair them with a glass of milk or yogurt for a wholesome breakfast. You can even drizzle a little almond butter or honey on top for an extra treat!
